Today I realized how many canning recipes I have found to try. At first I started to feel like I had missed out on all of them this year. Then I realized that the canning season is not over, there are still tomatoes in the garden, apples and pears (and other fruit) on the trees, pumpkins, squash, corn, etc. I think it would help if I were to start a list for myself of what I want to make and how much. Then when that particular vegetable/fruit comes into season I just have to look at the list, see what is the top priority and work my way from there.
While looking for other potential tomato canning recipes to make to day, I came across directions for making Peach Honey. It can also be made with nectarines. This is something I wish I would have seen when I was canning peaches. I still have several in the refrigerator, so I’ll look them over to see if they will work to make this. Another area to, “Waste not, want not.”
