Menu Plan Monday – April 22, 2013 (eating from the freezer, still)

  1. Crepes, fruit, juice and coffee shakes (it was a long evening last night)
  2. Cereal
  3. Omelets/eggs, toast, juice
  4. Leftover muffins (we only have a few left in the freezer), rusks (enough for one person for a breakfast)
  5. Shakes (using peaches from the freezer)
  6. Apple Oatmeal
  7. Eggs, toast, bacon

  1. Eat out
  2. Hummus (homemade, new recipe which I have all ingredients for), sliced veggies, leftovers, corn on the cob
  3. Salad
  4. French dip beef, creamed spinach, corn on the cob
  5. Salisbury Steak, cous cous salad
  6. Beef Stroganoff, peas, steamed carrots
  7. (at a conference with the whole family)

  1. Toast, jam, cheese, tea
  2. Sliced ham, green beans, carrot salad, potato salad
  3. Spaghetti (sauce in freezer)
  4. Ham salad/Salami sandwiches, sweet potato fries, corn on the cob
  5. Turkey Chili/cheese and jam sandwiches
  6. Leftovers
  7. Salami sandwiches with grilled onions and sliced tomato, fresh fruit
Last week I was off in my thinking by a week – we didn’t have the family conference on Saturday.  It is this Saturday instead.  I was wondering why I couldn’t remember what was on the menu.  That is because there wasn’t anything on there.  🙂  I pulled a few frozen soups/chilis out of the freezer, ones that only had a serving or two to them.  I added in some rice and toast and voila, lunch was served.
The freezer is looking more void, must still has food in it.  A lot of the pre-made meals and left over soups are used up, or will be by the end of this week.  In getting items out for this week I was able to rearrange the freezer and found some items tucked into the door or under larger bags.  These will be added to next mont’s menu.  (I’ve started making it out and have almost 15 meals, 10 of which a significant part is in the freezer or fridge.
I know that I will have to start filling the freezer again in May.  A freezer cooking day is already planned, to help restock our muffin supply.  I also already bought one of the meats for a meal and am keeping my eyes open for sales.  As it is, most of the meals I already have starts for will occur at the beginning of the month so I can have a few extra weeks to look for sales.
