Weekly Goals – October 6, 2013

While looking for one of the recipes below I noticed that this post was still set to ‘draft’ and never got published.  Okay, so it is Friday.  It at least is still the week I intended for it to be published for.  🙂

Last Week’s Goals:

  1. Make reservations for a trip at the end of the month – This is my main to-do this week.
  2. Make and freeze one batch of muffins (a different kind than last week)
  3. Make and freeze 3 months worth of a meal (meatloaf, pork chops in sauce, etc.)
  4. Read 1 hour to the kids
  5. Take limbs to yard waste site and bring home more mulch to spread at a future date.
  6. Finish scraping and painting porch
  7. Weed around rose bushes and spread mulch
  8. Add mulch to front flower bed
  9. Finish planning activities for trip
  10. Find places to stay and eat for trip

After looking at time and prices, we decided to fly rather than drive 24 hours to get to our destination.  This saved us 4 days and 4 hotel stays.  It was worth the extra money it seemed like we would be spending.  After doing the math, we were actually saving money.

The muffins this week came out so tasty.  Here are the banana muffin recipes I made.  Click on the pictures to go to the recipes:

Chocolate Chip Monkey Muffins made with Coconut Oil

We all really liked these.  They will definitely be made again.

Substitutions made: whole wheat flour in place of white flour, and brown sugar in place of white sugar.

Substitutions made: whole wheat flour in place of the white flour, and coconut oil in place of apple sauce.

The last two recipes tasted a lot alike.  Actually, I couldn’t tell any difference between them.

Note: I was actually looking for a banana cake recipe I had come across.  It obviously isn’t here, so I’ll have to go search for it.  Banana cake is the dessert plan for tonight.
